Spiced Apple & Cranberry Porridge

A warm bowl of this Spiced Apple & Cranberry Porridge is the perfect way to start these cold mornings. Packed with nutritious fruit, festive flavours, and health-boosting oats to help keep you fuller for longer. For an extra boost of protein and fibre, you could add a teaspoon of chia seeds to the porridge, or add a small handful of chopped almonds as a topping.

Ingredients

2 servings

For the spiced apple and cranberry compote

  • 1 eating apple, peeled, quartered, cored and diced
  • 65g cranberries (fresh or frozen)
  • ¼ tsp mixed spice
  • 1 tsp granulated sugar (or caster sugar)

For the porridge

  • 120g porridge oats
  • 500ml unsweetened almond milk (or any milk you prefer)
  • 1 tsp ground cinnamon
  • 30g chopped almonds (optional)
  • 2 tsp chia seeds (optional)

Method

STEP 1

To make the spiced apple and cranberry compote, add the chopped apple with 30ml water to pan and cook gently until the apple has almost softened. Then add the cranberries, sugar and mixed spice and continue to cook until the fruit is soft, and the compote has thickened slightly.

This first step can be done in advance before making the porridge.

STEP 2

Place the porridge oats, almond milk and ground cinnamon in a pan, stir thoroughly and simmer gently for 5 minutes or until the porridge is to your desired consistency. Mix in the chia seeds if using.

Serve with the spiced apple and cranberry compote on the top. Then scatter with the almonds if using and enjoy!
